  3. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, and honey to create the dressing. Season with salt and pepper to taste.
  4. Arrange arugula or mixed greens on a serving plate. Top with roasted beets, crumbled goat cheese, and chopped walnuts.
  5. Drizzle the dressing generously over the salad just before serving.
