🛒 Ingredients
- Mixed red berries (strawberries, raspberries, redcurrants, sour cherries) 125 g · 50 kcal
- Water 50 g · 0 kcal
- Granulated sugar 20 g · 80 kcal
- Cornstarch 8 g · 30 kcal
- Vanilla extract 1 g · 0 kcal
- Lemon juice 4 g · 0 kcal
👨🍳 Instructions
- Wash and hull the berries. If using sour cherries, pit them. If using frozen berries, thaw them slightly first.
- In a saucepan, combine most of the berries (reserving a few for later), water, granulated sugar, and lemon juice. Bring to a gentle boil over medium heat, then reduce heat and simmer for 5-7 minutes until the berries soften.
- In a small bowl, whisk the cornstarch with a few tablespoons of cold water to create a smooth slurry. Pour this mixture slowly into the simmering berry mixture, stirring constantly until it thickens.
- Remove from heat, stir in vanilla extract, and add the reserved fresh berries. Pour the Rote Grütze into individual bowls or a large serving dish.
- Let it cool completely to room temperature, then chill in the refrigerator for at least 2-3 hours before serving. Serve cold, traditionally with milk, cream, or vanilla sauce.
