  • Mixed red berries (strawberries, raspberries, redcurrants, sour cherries) 125 g · 50 kcal

👨‍🍳 Instructions

  1. Wash and hull the berries. If using sour cherries, pit them. If using frozen berries, thaw them slightly first.
  2. In a saucepan, combine most of the berries (reserving a few for later), water, granulated sugar, and lemon juice. Bring to a gentle boil over medium heat, then reduce heat and simmer for 5-7 minutes until the berries soften.
  3. In a small bowl, whisk the cornstarch with a few tablespoons of cold water to create a smooth slurry. Pour this mixture slowly into the simmering berry mixture, stirring constantly until it thickens.
  4. Remove from heat, stir in vanilla extract, and add the reserved fresh berries. Pour the Rote Grütze into individual bowls or a large serving dish.
  5. Let it cool completely to room temperature, then chill in the refrigerator for at least 2-3 hours before serving. Serve cold, traditionally with milk, cream, or vanilla sauce.
