  1. In a large bowl, combine whole wheat flour and salt. Gradually add water, mixing until a soft, pliable dough forms. Add a teaspoon of oil and knead the dough for 5-7 minutes until smooth.
  2. Cover the dough with a damp cloth and let it rest for 15-20 minutes. Divide the dough into equal small balls, about the size of a golf ball.
  3. Lightly dust your work surface with flour. Roll out each dough ball into a thin, round disc, about 6-8 inches in diameter, ensuring it's evenly thin.
  4. Heat a tawa (flat griddle) or a heavy-bottomed pan over medium-high heat until hot. Place one rolled roti on the hot tawa.
  5. Cook for about 30 seconds until small bubbles appear on the surface, then flip. Cook for another 30 seconds on the second side.
  6. For puffed roti, you can gently press the edges with a clean cloth or spatula after the second flip. Continue cooking until the roti puffs up completely and has light brown spots.
  7. Remove the cooked roti from the tawa and serve immediately, optionally brushing with a little ghee or butter.
