👨🍳 Instructions
- Preheat your oven to 200°C (400°F). Roast the red bell pepper for 20-25 minutes until the skin is blistered and slightly charred.
- Once roasted, place the bell pepper in a bowl, cover it with plastic wrap, and let it steam for 10 minutes; then peel, deseed, and roughly chop it.
- Soak the stale bread in a little warm water or fish broth for a few minutes until soft, then squeeze out excess liquid.
- In a food processor or with a mortar and pestle, combine the roasted bell pepper, garlic cloves, saffron, cayenne pepper, egg yolk, and soaked bread.
- Process the mixture until smooth, then slowly drizzle in the olive oil while continuing to blend until a thick, emulsified sauce forms.
- Season with salt and pepper to taste. Rouille is traditionally served with fish soup, especially bouillabaisse, or as a spread on toasted bread.
