👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F). Roast the red bell pepper for 20-25 minutes until the skin is blistered and slightly charred.
  2. Once roasted, place the bell pepper in a bowl, cover it with plastic wrap, and let it steam for 10 minutes; then peel, deseed, and roughly chop it.
  3. Soak the stale bread in a little warm water or fish broth for a few minutes until soft, then squeeze out excess liquid.
  4. In a food processor or with a mortar and pestle, combine the roasted bell pepper, garlic cloves, saffron, cayenne pepper, egg yolk, and soaked bread.
  5. Process the mixture until smooth, then slowly drizzle in the olive oil while continuing to blend until a thick, emulsified sauce forms.
  6. Season with salt and pepper to taste. Rouille is traditionally served with fish soup, especially bouillabaisse, or as a spread on toasted bread.
