👨🍳 Instructions
- Peel and dice potatoes into 1-inch cubes. Boil them in salted water until tender but not mushy, then drain and set aside.
- Wash spinach thoroughly, then blanch it briefly in boiling water for 1-2 minutes. Drain, cool, squeeze out excess water, and roughly chop.
- Heat oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter for a few seconds.
- Add finely chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Stir in minced garlic, grated ginger, and chopped green chili. Cook for 1-2 minutes until fragrant.
- Add turmeric powder, coriander powder, and a splash of water to prevent burning. Cook the spices for 1 minute.
- Add the boiled potatoes to the pan and gently mix to coat them with the spice mixture. Cook for 5 minutes, allowing flavors to meld.
- Stir in the chopped spinach and garam masala. Cook for another 3-5 minutes, until the spinach is fully heated through and combined with the potatoes.
- Adjust salt to taste and serve hot with naan, roti, or rice.
