- Slice the Kefalotyri or Graviera cheese into a 1-inch (2.5 cm) thick piece, ensuring it is uniform for even cooking.
- Dredge the cheese slice thoroughly in all-purpose flour, shaking off any excess.
- Heat olive oil in a small, heavy-bottomed pan or cast-iron skillet over medium-high heat until shimmering.
- Carefully place the floured cheese into the hot oil and fry for 2-3 minutes per side until deeply golden brown and crispy.
