👨‍🍳 Instructions

  1. Grill the tomatoes, bell peppers, onion, garlic cloves, and green chilies whole over medium-high heat until they are charred and softened. This can be done on an outdoor grill, grill pan, or directly over a gas burner.
  2. Once cooked, transfer the vegetables to a bowl, cover with plastic wrap, and let them cool for about 10-15 minutes. This step helps to steam them, making the peeling process easier.
  3. Peel the charred skin from the tomatoes and bell peppers, remove seeds from peppers and chilies, and discard the skin from the onion and garlic. Finely chop all the grilled vegetables.
  4. In a large bowl, combine the finely chopped grilled vegetables. Add olive oil, caraway powder, dried mint, salt, and black pepper to taste. Mix thoroughly to combine all the flavors.
  5. Serve Salata Mashwiya chilled or at room temperature, optionally garnished with hard-boiled eggs, tuna, or olives, and a drizzle of extra virgin olive oil.
