👨‍🍳 Instructions

  1. Soak the samp and beans separately in cold water overnight or for at least 8-12 hours; drain and rinse thoroughly before cooking.
  2. In a large pot, combine the drained samp and beans with enough fresh water to cover by about 5 cm. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until partially tender.
  3. While the samp and beans are simmering, chop the onion and potato into small cubes. In a separate pan, heat the vegetable oil and sauté the onion until translucent.
  4. Add the diced potato to the samp and beans pot. Stir in the sautéed onion and vegetable stock cube, then season with salt and pepper to taste. Continue to simmer until the samp, beans, and potato are all very tender and the stew has thickened.
  5. Serve hot as a comforting main dish, optionally garnished with fresh parsley.
