👨🍳 Instructions
- Rinse the Santorini fava (yellow split peas) thoroughly under cold water; if desired, soak them for 30 minutes to reduce cooking time, then drain.
- In a pot, add the fava, chopped white onion, and water until the fava is covered by about 2 inches.
- Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes or until the fava is very tender.
- Skim off any foam that rises to the surface during cooking.
- Once tender, remove from heat and using an immersion blender or food processor, blend the fava mixture until smooth and creamy.
- Stir in half of the extra virgin olive oil and season with salt to taste. If the Fava is too thick, add a little hot water to reach desired consistency.
- Serve warm, drizzled with the remaining olive oil, a squeeze of fresh lemon juice, and garnished with finely chopped fresh parsley and capers.
