👨‍🍳 Instructions

  1. Rinse the Santorini fava (yellow split peas) thoroughly under cold water; if desired, soak them for 30 minutes to reduce cooking time, then drain.
  2. In a pot, add the fava, chopped white onion, and water until the fava is covered by about 2 inches.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes or until the fava is very tender.
  4. Skim off any foam that rises to the surface during cooking.
  5. Once tender, remove from heat and using an immersion blender or food processor, blend the fava mixture until smooth and creamy.
  6. Stir in half of the extra virgin olive oil and season with salt to taste. If the Fava is too thick, add a little hot water to reach desired consistency.
  7. Serve warm, drizzled with the remaining olive oil, a squeeze of fresh lemon juice, and garnished with finely chopped fresh parsley and capers.
