- Heat oil in a heavy-bottomed pan or pressure cooker; add mustard seeds and cumin seeds, letting them splutter.
- Add chopped onion, green chili, and ginger-garlic paste; sauté until the onion turns translucent.
- Stir in the mixed vegetables and turmeric powder; cook for 2-3 minutes until slightly tender.
- Add the broken wheat (daliya) and toast it for 2-3 minutes, stirring constantly, until it turns aromatic.
- Pour in water (ratio 1:3 for daliya to water), add salt to taste, and bring to a boil; cover and simmer for 10-15 minutes.
- Once cooked and water is absorbed, fluff the daliya with a fork and garnish with fresh coriander leaves before serving hot.
