- Lemon wedge 10 g · 2 kcal
👨🍳 Instructions
- Carefully hold the live sea urchin with a thick towel or glove. Using strong kitchen shears or a specific sea urchin opener, cut around the mouth on the underside of the urchin.
- Invert the sea urchin, allowing the internal liquid to drain out. Use a spoon to gently scoop out the bright orange-yellow gonads (roe) from inside the shell.
- Rinse the gonads gently in a bowl of cold saltwater to remove any remaining gut or debris, then drain well.
- Arrange the fresh sea urchin gonads on a serving plate, optionally on a bed of ice. Serve immediately with a lemon wedge on the side.
