Seitan Stir Fry

👨🍳 Instructions
- Slice seitan into desired stir-fry pieces; chop broccoli into small florets, bell pepper and carrots into strips, and finely mince the onion, garlic, and ginger.
- In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, cornstarch, and half of the sesame oil to create the stir-fry sauce.
- Heat canola oil in a large wok or skillet over medium-high heat. Add seitan and cook until browned on all sides, about 4-5 minutes, then remove and set aside.
- Add onion, carrots, and broccoli to the wok and stir-fry for 3-4 minutes until slightly tender-crisp. Then, add bell pepper, snow peas, garlic, and ginger, cooking for another 2-3 minutes.
- Return the seitan to the wok, pour in the prepared sauce, and stir everything to coat. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats all ingredients.
- Remove from heat, drizzle with the remaining sesame oil, and serve immediately, optionally over steamed rice or noodles.
