👨‍🍳 Instructions

  1. In a large bowl, combine chickpea flour, turmeric powder, red chili powder, carom seeds, asafoetida, and salt.
  2. Gradually add water and knead to form a smooth, thick, and pliable dough; it should be firm enough to pass through a sev maker.
  3. Heat vegetable oil in a deep kadai or frying pan over medium-high heat until hot.
  4. Load a portion of the dough into a sev maker (chakli maker) fitted with a fine hole disc.
  5. Press the dough directly into the hot oil in a circular motion, creating thin strands; fry until golden and crispy, flipping once.
  6. Remove the fried sev with a slotted spoon and drain excess oil on paper towels; repeat with the remaining dough.
  7. Once cooled, break the sev into smaller pieces if desired and store in an airtight container.
