👨🍳 Instructions
- Rinse the red lentils thoroughly under cold water until the water runs clear; set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the diced carrot and minced garlic to the pot, cooking for another 2-3 minutes until fragrant.
- Stir in the ground cumin and turmeric, cooking for 1 minute until fragrant.
- Add the rinsed lentils, vegetable broth, and water to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes.
- The lentils should be tender and the soup thickened. Stir in the fresh lemon juice, and season with salt and pepper to taste.
- Serve hot, garnished with fresh chopped parsley and a drizzle of extra virgin olive oil if desired.
