  1. Rinse the red lentils thoroughly under cold water until the water runs clear; set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Add the diced carrot and minced garlic to the pot, cooking for another 2-3 minutes until fragrant.
  4. Stir in the ground cumin and turmeric, cooking for 1 minute until fragrant.
  5. Add the rinsed lentils, vegetable broth, and water to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes.
  6. The lentils should be tender and the soup thickened. Stir in the fresh lemon juice, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh chopped parsley and a drizzle of extra virgin olive oil if desired.
