  1. Combine 120ml warm water, 1 tsp active dry yeast, and 1 tsp granulated sugar in a small bowl; let it bloom for 5-10 minutes until foamy.
  2. In a large bowl, mix 500g all-purpose flour and 1 tsp salt, then add the yeast mixture and 180ml additional water; knead for 8-10 minutes until a smooth, elastic dough forms.
  3. Cover the dough and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  4. While the dough rises, prepare the molasses dip by whisking 100g grape molasses with 100ml water in a shallow bowl; pour 150g sesame seeds into another shallow dish.
  5. Punch down the risen dough, divide it into 8 equal portions, and roll each into a long rope (about 60 cm).
  6. Fold each rope in half, twist the two strands together, and join the ends to form a ring.
  7. Dip each simit into the molasses mixture, ensuring it's fully coated, then immediately transfer to the sesame seeds, pressing gently to adhere them generously.
  8. Place the coated simits on a baking sheet lined with parchment paper and let them rest for another 15-20 minutes.
  9. Preheat oven to 200°C (400°F). Bake the simits for 15-20 minutes, or until deeply golden brown and cooked through.
  10. Allow to cool slightly on a wire rack before serving.
