  1. Rinse the sorghum thoroughly under cold running water until the water runs clear, then drain well.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat; add chopped onion and diced carrot, sauté for 5-7 minutes until softened.
  3. Add minced garlic, ground cumin, coriander, and turmeric; cook for another minute until fragrant.
  4. Stir in the rinsed sorghum, then pour in the vegetable broth and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes, or until sorghum is tender and liquid is absorbed.
  6. Remove from heat and let it rest, covered, for 5-10 minutes, then fluff with a fork.
  7. Garnish with fresh chopped parsley and serve warm.
