👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F). Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy bits. Lightly brush the cut sides with olive oil and sprinkle with salt and pepper.
  2. Place the squash halves cut-side down on a baking sheet and roast for 35-45 minutes, or until tender. Once cooked, let them cool slightly, then use a fork to scrape out the spaghetti-like strands.
  3. While the squash is roasting, prepare the marinara sauce. Heat the remaining olive oil in a saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
  4. Add the minced garlic and dried oregano; cook for another minute until fragrant. Pour in the crushed tomatoes, season with salt and pepper, and bring to a simmer.
  5. Reduce the heat to low and let the marinara sauce simmer for at least 20 minutes, allowing the flavors to meld. Stir in fresh basil leaves just before serving.
  6. Serve the marinara sauce generously spooned into the spaghetti squash halves. Enjoy immediately as a healthy and flavorful meal.
