- Gently warm the vegetable broth in a saucepan and keep it simmering over low heat throughout the cooking process.
- In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Sauté the chopped onion until it softens and becomes translucent, about 5 minutes.
- Add the minced garlic and sliced cremini mushrooms, cooking for another 3-5 minutes until the mushrooms release their liquid and begin to lightly brown.
- Stir in the spelt and toast for 1-2 minutes until slightly fragrant, ensuring each grain is well coated with the oil and aromatics.
- Pour in the white wine and stir continuously until it has almost completely evaporated and the alcohol scent has dissipated.
- Add one ladleful of simmering broth to the spelt, stirring constantly until it is fully absorbed. Continue adding broth, one ladleful at a time, stirring until absorbed, for about 30-40 minutes, or until the spelt is tender and creamy.
- Remove the pot from the heat. Stir in the unsalted butter and grated Parmesan cheese until melted and fully incorporated, creating a rich and creamy texture.
- Season with salt and freshly ground black pepper to taste, then stir in the fresh chopped parsley just before serving immediately.
