👨🍳 Instructions
- Rinse the brown lentils thoroughly under cold water. In a medium pot, combine the rinsed lentils with 3-4 cups of water; bring to a boil, then reduce heat and simmer for 15-20 minutes, or until tender but still firm.
- Drain the cooked lentils and let them cool completely. While the lentils are cooling, finely dice the cucumber, tomatoes, and red onion.
