👨‍🍳 Instructions

  1. Lightly sauté fresh spinach in olive oil with minced garlic until just wilted, about 2-3 minutes. Remove from heat and squeeze out any excess water.
  2. In a bowl, combine the wilted spinach, chopped walnuts, crumbled feta cheese, finely diced red onion, and red bell pepper. Drizzle with lemon juice and season with a pinch of salt and black pepper.

  4. Spread the spinach and walnut mixture evenly down the center of the warmed tortilla, leaving space on the sides.
  5. Fold in the sides of the tortilla, then tightly roll it up from the bottom. Serve immediately, optionally halved.
