  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped onion and sauté until softened and translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Stir in the fresh spinach, working in batches if necessary, until it has completely wilted down.
  4. Pour in the vegetable broth, bring to a simmer, then reduce heat and let it cook for about 10 minutes to allow flavors to meld.
