  1. Rinse the dried split peas thoroughly under cold water; sort and discard any debris. Place the ham hock (if using) in a large pot and cover with water; bring to a boil, then reduce heat and simmer for 30 minutes to tenderize and release flavor.
  2. Remove the ham hock, set aside to cool, then shred the meat from the bone. Discard the bone and skin. Strain the cooking liquid and reserve for the soup base, discarding any impurities.
  3. In the same large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery; sauté for 5-7 minutes until softened.
  4. Add minced garlic and sauté for another minute until fragrant. Stir in the rinsed split peas, reserved ham broth, and chicken broth.
  5. Add the bay leaf and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 60-90 minutes, stirring occasionally, until the peas are very tender and the soup has thickened.
  6. Remove the bay leaf. Season the soup with additional salt and pepper to taste. Stir in the shredded ham meat and heat through.
  7. Serve hot, garnished with fresh parsley if desired. Enjoy this comforting and hearty soup.
