Sprouted Grain Bread

- Sprouted Wheat Berries 600 g · 900 kcal
- Whole Wheat Flour 120 g · 408 kcal
- Water 240 g · 0 kcal
- Active Dry Yeast 7 g · 25 kcal
- Honey 40 g · 120 kcal
- Olive Oil 28 g · 252 kcal
👨🍳 Instructions
- Rinse whole wheat berries thoroughly and soak in water for 8-12 hours. Drain, rinse again, and place in a jar with a mesh lid, rinsing and draining every 8-12 hours for 2-3 days until small sprouts appear.
- In a large bowl, combine warm water (105-115°F / 40-46°C), honey, and active dry yeast; let sit for 5-10 minutes until foamy.
- Add the sprouted wheat berries, whole wheat flour, olive oil, and salt to the yeast mixture. Stir until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, turning once to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Gently punch down the dough, shape it into a loaf, and place it in a greased 9x5 inch loaf pan. Cover and let rise for another 45-60 minutes, or until nearly doubled.
- Preheat oven to 375°F (190°C). Bake for 40-50 minutes, or until the crust is golden brown and the internal temperature reaches 200-210°F (93-99°C).
- Remove the bread from the pan immediately after baking and let it cool completely on a wire rack before slicing and serving.
