🛒 Ingredients
- Mung beans, dried 200 g · 694 kcal
- Water 800 g · 0 kcal
- Cornstarch 20 g · 70 kcal
👨🍳 Instructions
- Rinse the dried mung beans thoroughly and soak them in water for at least 4 hours or overnight; drain and rinse again.
- Transfer the soaked mung beans to a pot with 600ml of fresh water, bring to a boil, then reduce heat and simmer for 25-30 minutes until very tender.
- Once cooked, mash the beans with a fork or blend them into a smooth paste using an immersion blender or food processor, adding a little cooking liquid if needed.
- In a small bowl, whisk cornstarch with the remaining 200ml of water until smooth to create a slurry.
- Return the bean paste to the pot, stir in the sugar and salt, then gradually add the cornstarch slurry while stirring constantly over medium heat until the mixture thickens.
- Pour the thickened bean mixture into individual heatproof ramekins or a single heatproof dish.
- Steam the puddings in a steamer for 15-20 minutes until set; let them cool completely before serving.
