🛒 Ingredients

  • Mung beans, dried 200 g · 694 kcal
  • Water 800 g · 0 kcal
  • Cornstarch 20 g · 70 kcal

👨‍🍳 Instructions

  1. Rinse the dried mung beans thoroughly and soak them in water for at least 4 hours or overnight; drain and rinse again.
  2. Transfer the soaked mung beans to a pot with 600ml of fresh water, bring to a boil, then reduce heat and simmer for 25-30 minutes until very tender.
  3. Once cooked, mash the beans with a fork or blend them into a smooth paste using an immersion blender or food processor, adding a little cooking liquid if needed.
  4. In a small bowl, whisk cornstarch with the remaining 200ml of water until smooth to create a slurry.
  5. Return the bean paste to the pot, stir in the sugar and salt, then gradually add the cornstarch slurry while stirring constantly over medium heat until the mixture thickens.
  6. Pour the thickened bean mixture into individual heatproof ramekins or a single heatproof dish.
  7. Steam the puddings in a steamer for 15-20 minutes until set; let them cool completely before serving.
