  1. Thoroughly clean about 500g of fresh mussels by scrubbing their shells and removing any 'beards' (fibrous attachments); discard any mussels that are open and do not close when tapped.
  2. In a large pot with a lid, heat the olive oil over medium heat. Add the minced shallot and garlic, sautéing for 2-3 minutes until fragrant and softened.
  3. Pour in the dry white wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Season with a pinch of salt.
  4. Add the cleaned mussels to the pot, stir gently, then cover tightly with the lid. Steam for 5-7 minutes, or until all mussels have opened.
  5. Remove the pot from the heat and discard any unopened mussels. Stir in the fresh chopped parsley and the unsalted butter until it melts into the broth.
  6. Serve immediately in deep bowls, ensuring each serving gets a good amount of the flavorful broth. Best enjoyed with crusty bread for dipping.
