👨🍳 Instructions
- Thoroughly clean about 500g of fresh mussels by scrubbing their shells and removing any 'beards' (fibrous attachments); discard any mussels that are open and do not close when tapped.
- In a large pot with a lid, heat the olive oil over medium heat. Add the minced shallot and garlic, sautéing for 2-3 minutes until fragrant and softened.
- Pour in the dry white wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Season with a pinch of salt.
- Add the cleaned mussels to the pot, stir gently, then cover tightly with the lid. Steam for 5-7 minutes, or until all mussels have opened.
- Remove the pot from the heat and discard any unopened mussels. Stir in the fresh chopped parsley and the unsalted butter until it melts into the broth.
- Serve immediately in deep bowls, ensuring each serving gets a good amount of the flavorful broth. Best enjoyed with crusty bread for dipping.
