👨🍳 Instructions
- Rinse dried red kidney beans thoroughly and soak them in water overnight (at least 8 hours); drain and rinse again before cooking.
- Place the soaked beans in a large pot with enough fresh water to cover them by several inches; add the bay leaf and bring to a boil, then reduce heat and simmer for 45-60 minutes until tender.
- While the beans simmer, prepare the sofrito: heat olive oil in a separate skillet over medium heat.
- Add diced onion and green bell pepper to the skillet and sauté until softened, about 5-7 minutes.
- Stir in minced garlic, tomato paste, cumin powder, and dried oregano; cook for another 1-2 minutes until fragrant.
- Carefully transfer the sofrito mixture to the pot with the simmering beans; stir well to combine.
- Continue to simmer the frijoles for another 15-30 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Taste and adjust seasoning with salt as needed; discard the bay leaf before serving.
- Serve hot, garnished with fresh cilantro, traditionally with white rice.
