  1. Wash the water spinach thoroughly, trim off any tough stems, and cut the greens into 2-inch pieces. Finely mince the garlic cloves.
  2. In a small bowl, whisk together the light soy sauce, oyster sauce, and sugar to create the stir-fry sauce.
  3. Heat vegetable oil in a wok or large skillet over high heat until shimmering. Add the minced garlic and stir-fry for 15-30 seconds until fragrant.
  4. Add the water spinach to the wok. Stir-fry for 1-2 minutes until it starts to wilt.
  5. Pour in the prepared sauce and continue to stir-fry for another 1-2 minutes until the spinach is tender-crisp and coated with sauce.
  6. Remove from heat and serve immediately as a delicious side dish, often accompanied by rice.
