👨‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Wash the tomatoes, slice off the tops, and carefully scoop out the pulp and seeds with a spoon, reserving some of the pulp.
  2. Finely chop the reserved tomato pulp, onion, and garlic. Heat olive oil in a pan and sauté the onion until translucent, then add garlic and cook for another minute.
  3. Add the ground mixed meat to the pan and cook, breaking it up with a spoon, until it's browned. Drain any excess fat.
  4. Stir in the chopped tomato pulp, uncooked rice, chopped parsley, and fresh thyme. Season with salt and black pepper to taste.
  5. Fill the hollowed tomatoes with the meat and rice mixture, piling it slightly above the rim. Place the stuffed tomatoes in a baking dish.
  6. Add a splash of water or broth to the bottom of the baking dish, then cover the dish with foil. Bake for 30 minutes, then remove foil and bake for another 20-30 minutes, or until tomatoes are tender and the top is lightly browned.
  7. Serve hot, optionally garnished with fresh parsley.
