👨🍳 Instructions
- Preheat oven to 180°C (350°F). Wash the tomatoes, slice off the tops, and carefully scoop out the pulp and seeds with a spoon, reserving some of the pulp.
- Finely chop the reserved tomato pulp, onion, and garlic. Heat olive oil in a pan and sauté the onion until translucent, then add garlic and cook for another minute.
- Add the ground mixed meat to the pan and cook, breaking it up with a spoon, until it's browned. Drain any excess fat.
- Stir in the chopped tomato pulp, uncooked rice, chopped parsley, and fresh thyme. Season with salt and black pepper to taste.
- Fill the hollowed tomatoes with the meat and rice mixture, piling it slightly above the rim. Place the stuffed tomatoes in a baking dish.
- Add a splash of water or broth to the bottom of the baking dish, then cover the dish with foil. Bake for 30 minutes, then remove foil and bake for another 20-30 minutes, or until tomatoes are tender and the top is lightly browned.
- Serve hot, optionally garnished with fresh parsley.
