👨‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Wash tomatoes, cut off the tops, and carefully scoop out the pulp and seeds, reserving some of the pulp.
  2. Finely chop the reserved tomato pulp, onion, garlic, and red bell pepper. In a pan, heat olive oil and sauté the chopped vegetables until softened, about 5-7 minutes.
  3. Stir in the cooked white rice, fresh parsley, vegetable broth, salt, and pepper into the sautéed vegetables. Mix well to combine all ingredients.
  4. Carefully fill each hollowed tomato with the rice and vegetable mixture. Place the stuffed tomatoes in a baking dish.
  5. Bake for 35-40 minutes, or until the tomatoes are tender and the filling is heated through. Serve hot as a main dish or side.
