  1. Select ripe Roma or plum tomatoes, wash them thoroughly, and slice them in half lengthwise.
  2. Gently squeeze out excess water and seeds, then arrange the tomato halves cut-side up on drying racks or baking sheets.
  3. Place the racks in direct sunlight for 4-10 days, covering them at night or during rain, until the tomatoes are leathery and pliable but not brittle.
  4. Alternatively, use a food dehydrator at 135°F (57°C) for 6-12 hours, or a very low oven (around 175°F/80°C with the door slightly ajar) for 8-12 hours.
  5. Once dried, allow the tomatoes to cool completely before storing them in an airtight container at room temperature for up to a few weeks, or in olive oil with herbs for longer preservation.
