👨‍🍳 Instructions

  1. If not already done, boil the beets until tender, then peel and dice them. Also, hard-boil the eggs, then peel and chop them.
  2. In a large bowl, combine the diced beets, diced cucumbers, chopped hard-boiled eggs, fresh dill, and green onions.
  3. Pour in the kefir, then add lemon juice, sugar, and salt to taste; stir well to combine all ingredients.
  4. Cover the bowl and chill the svekolnik in the refrigerator for at least 1-2 hours before serving to allow the flavors to meld.
