👨🍳 Instructions
- Bake or boil sweet potatoes until very tender; peel and mash them thoroughly in a large bowl.
- Drain and rinse the black beans, then add them to the mashed sweet potato and mash together until combined but still slightly chunky.
- Heat a tablespoon of olive oil in a pan, sauté finely chopped onion until soft, then add minced garlic and spices; cook for another minute until fragrant.
- Add the sautéed onion mixture, rolled oats, and a pinch of salt and pepper to the sweet potato and bean mixture; mix everything well until a cohesive patty mixture forms.
- Divide the mixture into portions and form four firm patties; refrigerate for 15-20 minutes to help them firm up.
- Preheat oven to 200°C (400°F) or heat a lightly oiled non-stick pan over medium heat; cook patties for 5-7 minutes per side until golden brown and heated through.
- Toast burger buns lightly. Assemble the burgers with the sweet potato patty, vegan mayonnaise, lettuce, tomato slices, red onion, and avocado.
