👨‍🍳 Instructions

  1. Bake or boil sweet potatoes until very tender; peel and mash them thoroughly in a large bowl.
  2. Drain and rinse the black beans, then add them to the mashed sweet potato and mash together until combined but still slightly chunky.
  3. Heat a tablespoon of olive oil in a pan, sauté finely chopped onion until soft, then add minced garlic and spices; cook for another minute until fragrant.
  4. Add the sautéed onion mixture, rolled oats, and a pinch of salt and pepper to the sweet potato and bean mixture; mix everything well until a cohesive patty mixture forms.
  5. Divide the mixture into portions and form four firm patties; refrigerate for 15-20 minutes to help them firm up.
  6. Preheat oven to 200°C (400°F) or heat a lightly oiled non-stick pan over medium heat; cook patties for 5-7 minutes per side until golden brown and heated through.
  7. Toast burger buns lightly. Assemble the burgers with the sweet potato patty, vegan mayonnaise, lettuce, tomato slices, red onion, and avocado.
