👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and bell pepper, sautéing until softened, about 5-7 minutes.
- Stir in minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper. Cook for 1 minute until fragrant.
- Add diced sweet potatoes, canned diced tomatoes, tomato paste, black beans, kidney beans, and vegetable broth to the pot. Stir well to combine.
- Bring to a simmer, then reduce heat to low, cover, and cook for 25-30 minutes, or until sweet potatoes are tender, stirring occasionally.
