- Sweet Potato 500 g · 432 kcal

- Preheat oven to 200°C (400°F). Pierce the sweet potatoes several times with a fork, then bake for 45-60 minutes until very tender.
- Once cooked, allow sweet potatoes to cool slightly, then peel and mash thoroughly until smooth.
- In a large bowl, combine the mashed sweet potato, flour, egg, a pinch of nutmeg, and a pinch of salt. Mix until a shaggy dough forms, then gently knead until just combined.
- Divide the dough into several portions. Roll each portion into a long rope, about 2 cm (0.8 inch) thick, then cut into 2 cm (0.8 inch) pieces.
- If desired, gently roll each gnocchi piece over the tines of a fork to create ridges, which will help hold sauce.
- Bring a large pot of salted water to a rolling boil. Carefully drop the gnocchi into the boiling water in batches.
- Cook for 2-3 minutes, or until the gnocchi float to the surface. Remove with a slotted spoon and drain well.
- For serving, you can lightly sauté the cooked gnocchi in olive oil until golden, then toss with your favorite sauce, fresh herbs, or grated cheese.
