  1. Preheat oven to 200°C (400°F). Pierce the sweet potatoes several times with a fork, then bake for 45-60 minutes until very tender.
  2. Once cooked, allow sweet potatoes to cool slightly, then peel and mash thoroughly until smooth.
  3. In a large bowl, combine the mashed sweet potato, flour, egg, a pinch of nutmeg, and a pinch of salt. Mix until a shaggy dough forms, then gently knead until just combined.
  4. Divide the dough into several portions. Roll each portion into a long rope, about 2 cm (0.8 inch) thick, then cut into 2 cm (0.8 inch) pieces.
  5. If desired, gently roll each gnocchi piece over the tines of a fork to create ridges, which will help hold sauce.
  6. Bring a large pot of salted water to a rolling boil. Carefully drop the gnocchi into the boiling water in batches.
  7. Cook for 2-3 minutes, or until the gnocchi float to the surface. Remove with a slotted spoon and drain well.
  8. For serving, you can lightly sauté the cooked gnocchi in olive oil until golden, then toss with your favorite sauce, fresh herbs, or grated cheese.
