  1. Wash and peel the sweet potatoes, then dice them into small, uniform cubes of about 1/2 inch (1.2 cm). Dice the onion and red bell pepper to a similar size and mince the garlic.
  2. Heat olive oil in a large non-stick skillet over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften and brown.
