- Cook sweet potato noodles according to package directions; drain, rinse with cold water, and set aside to prevent sticking.
- Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, and grated ginger until well combined.
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add sliced onion, carrots, and bell pepper, stir-fry for 3-4 minutes until slightly tender-crisp.
- Add sliced mushrooms and tofu to the wok, continuing to stir-fry for another 3-5 minutes until mushrooms are browned and tofu is heated through.
