  • Dry soybeans 25 g · 112 kcal
  • Granulated sugar 15 g · 58 kcal

👨‍🍳 Instructions

  1. Rinse the dry soybeans thoroughly and soak them in a large bowl with plenty of fresh water for at least 8 hours or overnight.
  2. Drain the soaked soybeans and rinse them again; discard the soaking water.
  3. Combine the rinsed soybeans with the water (210g) in a high-speed blender and blend until very smooth and creamy.
  4. Place a cheesecloth or a fine-mesh sieve over a large pot and pour the blended mixture through it, squeezing out as much liquid as possible from the soy pulp (okara).
  5. Bring the strained soy milk to a boil over medium heat, then reduce heat and simmer for 10-15 minutes, stirring occasionally to prevent scorching.
  6. Remove from heat and stir in the granulated sugar (15g) until it is fully dissolved.
  7. Serve the sweet soy milk warm or chilled, as desired.
