👨🍳 Instructions
- Wash Swiss chard thoroughly. Separate stems from leaves; finely chop the stems and roughly chop the leaves.
- Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
- Add minced garlic, chopped chard stems, ground cumin, and smoked paprika to the skillet. Cook for 2-3 minutes until fragrant.
- Stir in the chopped chard leaves, canned diced tomatoes, and vegetable broth. Cover and simmer for 10 minutes, or until the chard leaves are tender.
- Add the drained chickpeas to the pot and stir well. Continue to simmer for another 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with salt to taste.
- Serve hot, garnished with fresh parsley if desired. This dish pairs well with crusty bread or brown rice.
