👨🍳 Instructions
- Soak the dried fava beans in cold water for at least 12-24 hours, changing the water once or twice, until they are plump and easily split. Drain them thoroughly.
- Combine the soaked fava beans, parsley, cilantro, dill, onion, garlic, ground cumin, and ground coriander in a food processor.
- Process the mixture until it forms a coarse, slightly pasty dough, stopping to scrape down the sides as needed; avoid making it too smooth.
- Transfer the mixture to a bowl, stir in the baking soda, and season with salt and pepper to taste. Mix well and refrigerate for at least 30 minutes.
- Heat the vegetable oil in a deep pot or fryer to 170-180°C (340-350°F).
- Form the Taameya mixture into small, flat patties (about 4-5 cm in diameter and 1 cm thick).
- Carefully deep-fry the patties in batches for 3-5 minutes per side, or until golden brown and cooked through.
- Remove the Taameya with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil before serving.
