👨‍🍳 Instructions

  1. Soak the dried fava beans in cold water for at least 12-24 hours, changing the water once or twice, until they are plump and easily split. Drain them thoroughly.
  2. Combine the soaked fava beans, parsley, cilantro, dill, onion, garlic, ground cumin, and ground coriander in a food processor.
  3. Process the mixture until it forms a coarse, slightly pasty dough, stopping to scrape down the sides as needed; avoid making it too smooth.
  4. Transfer the mixture to a bowl, stir in the baking soda, and season with salt and pepper to taste. Mix well and refrigerate for at least 30 minutes.
  5. Heat the vegetable oil in a deep pot or fryer to 170-180°C (340-350°F).
  6. Form the Taameya mixture into small, flat patties (about 4-5 cm in diameter and 1 cm thick).
  7. Carefully deep-fry the patties in batches for 3-5 minutes per side, or until golden brown and cooked through.
  8. Remove the Taameya with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil before serving.
