- Rinse the fine bulgur under cold water, then soak it in a small bowl with just enough cold water to cover for about 15-20 minutes, or until softened; drain any excess water thoroughly by pressing gently.
- Finely chop the fresh parsley and mint, ripe tomatoes, and green onions. Ensure all ingredients are very finely diced for the authentic tabbouleh texture.
- In a large bowl, combine the soaked bulgur, chopped parsley, mint, tomatoes, and green onions. Fluff the bulgur with a fork to separate the grains.
- In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and black pepper to create the dressing.
