👨‍🍳 Instructions

  1. In a small mixer or food processor, combine the grated coconut, green chilies, garlic cloves, and cumin seeds. Grind into a coarse, wet paste without adding water.
  2. Heat coconut oil in a large pan or kadai over medium heat. Add mustard seeds and allow them to splutter, then add the curry leaves.
  3. Add the finely chopped cabbage and turmeric powder to the pan. Sauté for 3-5 minutes until the cabbage starts to soften slightly.
  4. Stir in the prepared coconut mixture and salt. Cover the pan and cook on low heat for 5-7 minutes until the cabbage is tender-crisp, stirring occasionally.
  5. Remove the lid and cook for another 2-3 minutes, stirring continuously, until any remaining moisture has evaporated and the thoran is dry. Serve hot as a side dish.
