👨🍳 Instructions
- Preheat your oven to 180°C (350°F). Lightly grease a round gratin dish or oven-safe pan with olive oil.
- Thinly slice the zucchini, tomatoes, and eggplant into uniform rounds, about 0.5 cm (1/4 inch) thick. Finely chop the onion and garlic.
- Spread the chopped onion and garlic evenly on the bottom of the prepared dish. Season with a pinch of salt and pepper.
- Arrange the sliced zucchini, tomatoes, and eggplant alternately in concentric circles or rows on top of the onion mixture, overlapping them slightly.
- Drizzle the arranged vegetables with the remaining olive oil, then sprinkle generously with Herbs de Provence, salt, and pepper.
- Bake for 45-50 minutes, or until the vegetables are tender and slightly caramelized on top. If desired, cover with foil for the first 30 minutes to prevent over-browning.
- Remove from oven and let rest for a few minutes before serving. Tian Provencal is delicious served warm, either as a side dish or a light main course.
