👨‍🍳 Instructions

  1. Preheat your oven to 180°C (350°F). Lightly grease a round gratin dish or oven-safe pan with olive oil.
  2. Thinly slice the zucchini, tomatoes, and eggplant into uniform rounds, about 0.5 cm (1/4 inch) thick. Finely chop the onion and garlic.
  3. Spread the chopped onion and garlic evenly on the bottom of the prepared dish. Season with a pinch of salt and pepper.
  4. Arrange the sliced zucchini, tomatoes, and eggplant alternately in concentric circles or rows on top of the onion mixture, overlapping them slightly.
  5. Drizzle the arranged vegetables with the remaining olive oil, then sprinkle generously with Herbs de Provence, salt, and pepper.
  6. Bake for 45-50 minutes, or until the vegetables are tender and slightly caramelized on top. If desired, cover with foil for the first 30 minutes to prevent over-browning.
  7. Remove from oven and let rest for a few minutes before serving. Tian Provencal is delicious served warm, either as a side dish or a light main course.
