👨‍🍳 Instructions

  1. Bring 103g of water to a boil, then remove from heat. Add 50g of couscous, cover, and let it stand for 5 minutes until the water is absorbed and the couscous is fluffy.
  2. While the couscous is resting, finely dice 100g of tomatoes, 50g of cucumber, and 15g of red onion. Roughly chop 8g of fresh parsley and 4g of fresh mint.
  3. In a large bowl, fluff the cooked couscous with a fork. Add the diced tomatoes, cucumber, red onion, parsley, and mint to the bowl.
  4. In a small bowl, whisk together 10g of olive oil, 10g of lemon juice, a pinch of salt, and a dash of black pepper to create the dressing.
  5. Pour the dressing over the couscous and vegetables, then toss gently to combine all ingredients thoroughly. Taste and adjust seasoning if needed.
  6. For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving. Serve cold as a refreshing side or light main dish.
