👨🍳 Instructions
- Bring 103g of water to a boil, then remove from heat. Add 50g of couscous, cover, and let it stand for 5 minutes until the water is absorbed and the couscous is fluffy.
- While the couscous is resting, finely dice 100g of tomatoes, 50g of cucumber, and 15g of red onion. Roughly chop 8g of fresh parsley and 4g of fresh mint.
- In a large bowl, fluff the cooked couscous with a fork. Add the diced tomatoes, cucumber, red onion, parsley, and mint to the bowl.
- In a small bowl, whisk together 10g of olive oil, 10g of lemon juice, a pinch of salt, and a dash of black pepper to create the dressing.
- Pour the dressing over the couscous and vegetables, then toss gently to combine all ingredients thoroughly. Taste and adjust seasoning if needed.
- For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving. Serve cold as a refreshing side or light main dish.
