  1. Wash and finely dice the tomatoes, then place them in a colander, sprinkle with 1 teaspoon of salt, and let them drain for at least 30 minutes to remove excess moisture.
  2. While the tomatoes drain, finely chop the red onion, fresh mint, and fresh parsley.
  3. In a large bowl, combine the drained tomatoes, chopped onion, mint, and parsley. Add the all-purpose flour and baking powder, mixing thoroughly until a thick batter forms.
  4. Heat about 1-2 cm of olive oil in a large frying pan over medium-high heat. Once hot, drop spoonfuls of the batter into the pan, flattening them slightly.
  5. Fry the tomatokeftedes for 3-4 minutes per side until golden brown and crispy. Transfer them to a plate lined with paper towels to absorb excess oil.
