👨🍳 Instructions
- Wash and finely dice the tomatoes, then place them in a colander, sprinkle with 1 teaspoon of salt, and let them drain for at least 30 minutes to remove excess moisture.
- While the tomatoes drain, finely chop the red onion, fresh mint, and fresh parsley.
- In a large bowl, combine the drained tomatoes, chopped onion, mint, and parsley. Add the all-purpose flour and baking powder, mixing thoroughly until a thick batter forms.
- Heat about 1-2 cm of olive oil in a large frying pan over medium-high heat. Once hot, drop spoonfuls of the batter into the pan, flattening them slightly.
- Fry the tomatokeftedes for 3-4 minutes per side until golden brown and crispy. Transfer them to a plate lined with paper towels to absorb excess oil.
- Serve the tomatokeftedes hot, garnished with extra fresh mint or parsley if desired, often accompanied by a dollop of Greek yogurt or tzatziki.
