👨🍳 Instructions
- Dice the lamb into bite-sized pieces. Prepare all vegetables by washing, peeling (if necessary), and dicing them into similar-sized chunks.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb pieces on all sides, then remove and set aside.
- Add onions and carrots to the same pot and sauté until softened, about 5-7 minutes. Add garlic and tomato paste, cooking for another minute until fragrant.
- Return the browned lamb to the pot. Add potatoes, eggplant, zucchini, green beans, bell pepper, and fresh tomatoes. Season with salt, pepper, and a pinch of paprika.
- Add enough water or broth to just cover the vegetables. Bring to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes, or until the meat is tender and vegetables are cooked through.
- Serve hot, garnished with fresh parsley or mint, traditionally accompanied by rice or crusty bread.
