👨‍🍳 Instructions

  1. Dice the lamb into bite-sized pieces. Prepare all vegetables by washing, peeling (if necessary), and dicing them into similar-sized chunks.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb pieces on all sides, then remove and set aside.
  3. Add onions and carrots to the same pot and sauté until softened, about 5-7 minutes. Add garlic and tomato paste, cooking for another minute until fragrant.
  4. Return the browned lamb to the pot. Add potatoes, eggplant, zucchini, green beans, bell pepper, and fresh tomatoes. Season with salt, pepper, and a pinch of paprika.
  5. Add enough water or broth to just cover the vegetables. Bring to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes, or until the meat is tender and vegetables are cooked through.
  6. Serve hot, garnished with fresh parsley or mint, traditionally accompanied by rice or crusty bread.
