👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery (soffritto) and sauté for 8-10 minutes until softened.
- Stir in the minced garlic, fresh rosemary, and sage. Cook for another minute until fragrant, being careful not to burn the garlic.
- Add the diced tomatoes and vegetable broth to the pot. Bring the mixture to a simmer, then reduce heat and let it gently bubble for 15 minutes to allow flavors to meld.
- Stir in the drained cannellini beans and chopped kale. Continue to simmer for another 10-15 minutes, or until the kale is tender.
