  • Black beans, cooked 650 g · 858 kcal
  • Smoked bacon, diced 100 g · 540 kcal
  • Onion, chopped 200 g · 80 kcal
  • Garlic, minced 20 g · 30 kcal
  • Manioc flour (farinha de mandioca) 150 g · 537 kcal

👨‍🍳 Instructions

  1. If using dry beans, soak black beans overnight, then cook them in water until very tender; reserve some of the cooking liquid.
  2. In a large pot or pan, sauté the diced bacon until crispy; remove the bacon and set aside, leaving the rendered fat in the pan.
  3. Add the vegetable oil to the pan with the bacon fat, then sauté the chopped onion and minced garlic until softened and fragrant.
  4. Add the cooked black beans to the pan along with some of their cooking liquid; mash the beans coarsely with a fork or potato masher, leaving some whole for texture.
  5. Gradually stir in the manioc flour, a little at a time, until the mixture thickens to a dense paste; add more reserved bean liquid if it becomes too thick.
  6. Season with salt to taste and stir in most of the crispy bacon; heat through gently.
  7. Serve the Tutu de Feijao warm, garnished with the remaining crispy bacon and fresh chopped cilantro or parsley.
