  1. Thaw phyllo dough according to package directions; preheat oven to 180°C (350°F) and grease a 9x13 inch (23x33 cm) baking dish.
  2. In a large bowl, combine crumbled feta, grated Kefalotyri (or Graviera), eggs, milk, and black pepper; mix well until evenly combined.
  3. Lay half of the phyllo sheets in the prepared baking dish, brushing each sheet generously with melted butter before adding the next, creating an overhang on the sides.
  4. Spread the cheese mixture evenly over the layered phyllo dough.
  5. Cover the filling with the remaining phyllo sheets, again brushing each sheet with melted butter before adding the next, then tuck in the overhanging edges to seal.
  6. Score the top layers of phyllo with a sharp knife into desired serving sizes (squares or diamonds), being careful not to cut through to the filling.
  7. Bake for 45-55 minutes, or until golden brown and puffed, allowing it to cool slightly before serving.
