🛒 Ingredients
- Millet flour 40 g · 150 kcal
- Water 200 g · 0 kcal

- Combine millet flour with about 1 cup (240ml) of water in a non-metallic bowl and mix well to form a smooth, lump-free slurry. Gradually add more water to achieve a thin, consistent mixture.
- Cover the bowl loosely with a clean cloth or lid and allow the slurry to ferment at room temperature for 1 to 3 days. Stir it occasionally; bubbles and a distinct sour smell will indicate proper fermentation.
- Once fermented, bring 2 cups (480ml) of fresh water to a boil in a medium saucepan. Reduce the heat to medium-low.
- Slowly pour the fermented millet slurry into the simmering water while continuously whisking to prevent lumps. The porridge will begin to thicken.
- Continue to cook, stirring frequently, for about 10-15 minutes until the uji thickens to your desired porridge-like consistency. It should be smooth and creamy.
- Remove from heat. Stir in sugar to taste, if desired, and serve warm in bowls. You can garnish it with fruit, nuts, or a drizzle of honey.
