👨‍🍳 Instructions

  1. Combine millet flour with about 1 cup (240ml) of water in a non-metallic bowl and mix well to form a smooth, lump-free slurry. Gradually add more water to achieve a thin, consistent mixture.
  2. Cover the bowl loosely with a clean cloth or lid and allow the slurry to ferment at room temperature for 1 to 3 days. Stir it occasionally; bubbles and a distinct sour smell will indicate proper fermentation.
  3. Once fermented, bring 2 cups (480ml) of fresh water to a boil in a medium saucepan. Reduce the heat to medium-low.
  4. Slowly pour the fermented millet slurry into the simmering water while continuously whisking to prevent lumps. The porridge will begin to thicken.
  5. Continue to cook, stirring frequently, for about 10-15 minutes until the uji thickens to your desired porridge-like consistency. It should be smooth and creamy.
  6. Remove from heat. Stir in sugar to taste, if desired, and serve warm in bowls. You can garnish it with fruit, nuts, or a drizzle of honey.
