👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, bell pepper, and celery; cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant. Stir in chili powder, cumin, smoked paprika, and dried oregano; cook for another minute, stirring constantly.
- Pour in the crushed tomatoes, tomato paste, rinsed kidney beans, black beans, and vegetable broth. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to an hour, for flavors to meld.
- Stir occasionally and season with salt and black pepper to taste. Serve hot, garnished with fresh cilantro or your favorite chili toppings.
